Method: Combine wine,ginger, shallots, peppercorn and bay leaves. Over high heat reduce mixture by half and add the flour and mix well to combine and cook about 2 minutes. Add the hot sauce & stock bring to a boil and reduce to a simmer for about 15 minutes. Correct seasoning and strain.
***This is an excellent sauce for meat or chicken.
Variations:
Add 1 tbsp of instant coffee for a coffee sauce.
Add 1/4 cup cream for a cream sauce.
Add 1 cup bbq sauce & tbsp brown sugar for red wine bbq sauce.
Add 1/2 cup cooked apples for red wine apple sauce.
Add 1/4 cup chopped roasted red pepper & 1 tbsp tomato paste for spicy roasted red pepper wine sauce.
