Spicy Garlic Shrimp Papaya on Avocado Salad

The Shrimp

24 Large Shrimps Peeled and Devained
3 Cloves of Garlic Minced
2 Stalk Green Onion Finely Chopped
3 Tbsp Butter
3 Oz Rum
1 Tbsp  Island Spiced Mango Pepper Sauce

Lime Juice
Salt to Taste

Method: Over  high heat melt butter and saute garlic and shrimp for 1 to 2 minutes add rum, mango pepper sauce and lime juice. Bring to a boil add salt as needed. Serve with avocado salad.
The Salad

2 Avocados -Chopped
1/4 cup Red Pepper- Chopped fine
1 small Papaya peeled seeded and diced
1 Tsp Chopped Mint
1 Tsp Chopped Cilantro
1 Tbsp Chef Carlton’s Island Spiced Hot Sauce
1 Tsp Lime Juice
2 Tbsp Olive Oil
Salt to taste
 
Method:Combine all ingredients in a bowl and mix well, correct seasoning,serve with mango papaya shrimp

 

 

 

 

 CRISP PLANTAIN

 1 Green Plantain -Sliced thinly as desired

Oil For Frying

Salt

Heat oil to about 350 degrees using a deep fryer thermometer to measure temperature. Fry plantain until golden drain on paper towel. Use to garnish shrimp and avocado dish.
