Spiced Scallops in Coconut Rum Sauce

18 Large Scallops
1/4 Cup Onion Chopped Fine
1/4 Cup Tomato Diced
1/4 Cup Mango Diced
1/4 Pineapple Diced
1 Cup Coconut Milk
1/4 Cup Rum
3 Tbsp Island Spiced Hot Sauce
Lime Juice
Salt and Pepper to Taste
Oil
Over medium high heat in oil sear scallops until well brown on both sides set aside. Add onion and carmalize, add tomato,mango,pineapple and cook a few minutes. Deglaze with rum add coconut milk,lime juice and Island Spiced hot sauce. Bring to a boil and simmer five to ten minutes on low add scallops and correct seasoning.
