Slow Roast Beef Sirloin

1 3lb beef sirlion trimmed
4 tbsp Chef Carlton Peppercorn Garlic Rub
2 tbsp dijon mustard
1 tbsp oil
1 tbsp dried herbs
1 onion chopped
2 Carrots Chopped
1 stalk celery chopped

Mix mustard, thyme, oil and spices together and rub on meat. Place vegetable in bottom of roasting pan an place meat on top add 1 cups of beef stock. Roast on 450 degrees oven for 20 minutes and reduce to 300 degrees and cook for another 40 minutes or until desired doness.
