Salmon Fillet Stuffed with Curried Crab

6 5 oz Salmon Fillets
2 Tbsp island Seafood Seasoning
Zest and Juice of 1 Lime
Pinch of Allspice and Salt
2 tbsp Oil
Mix spices with oil and lime juice and marinate salmon for 30 minutes.


The Stuffing




8 oz Crab Meat
1 Tbsp Butter
1 Tbsp Island Spiced Hot Sauce
2 Cloves Garlic Crushed
2 Stalks Scallion
1 Tbsp Curry Powder
1 Tsp Chopped Fresh Thyme
1 Tablespoon
1 Small Tomato Seedded and Julienne
1/4 Cup Coconut Milk
Fresh Braed Crumbs as Required
Salt and Pepper.


Saute scallion,curry powder, tomato, and garlic in butter. Add hot sauce, coconut milk bring to a boil and simmer 5 minutes add crab meat and mix weell add spices and correct seasoning, cool. Make a hole in the top of the salmon fillet and divide stuffing evenly among the fillets. Bake @350 degrees a for about 8 minutes or until cooked, serve with rice.
