3-6 oz boneless skinless red snapper fillets ( cut fillets in two length wise)
2 tbsp Island Spiced Citrus Herb Spice
salt and pepper
1 half ripe plantain cut in thin slices length wise
oil for frying
Method: Season snapper with citrus spice, salt & pepper, roll each fillet and then roll in plantain and secure with a tooth pick or two. Heat oil enough to cover the fish half way when frying. Heat oil over over medium high heat and fry plantain wrapped fish until golden flip over and do the same on the other side. Drain on paper towel and serve with spicy mango garlic sauce.
