Pineapple Ginger Scallops

18 Large Scallops
2 Tbsp Lime or Lemon Pepper Seasoning
1 Tbsp Chopped Fresh Thyme
1 Tsp Chopped Garlic
1 Tbsp Chopped Cilantro
1 Tbsp Minced Ginger
1/4 Chopped Pineapple
3 Tbsp Island Spiced Pineapple Papaya Ginger Scallops
1/4 Cup Rum
Oil or Butter
Salt to Taste

Mix lime or lemon seasoning with thyme and about 2 tbsp of oil, toss with scalllops and set aside. Heat BBQ grill, grill scallops until half way done. Over medium high heat saute ginger and garlic until lightly carmalized. Add the rum then the chopped pineapple and the pineapple papaya ginger sauce and the cilantro. Bring to a boil add the scalllops and toss well adjust the seasoning, serve with rice or a salad.
