Jerk Spice Blackened Salmon

6– 4-6 oz salmon filets
6 tbsp Chef Carlton jerk spice Rub
2 tbsp paprika
2 tbsp chili powder

mix spices together melt butter on high heat dip salmon in spice blend until well coated and sear until blackened, finish cooking in oven.

Pineapple Mango Glaze
1 cup mango nectar
1 cup pineapple fresh or canned,
1/4 cup Chef Carlton Jerk Marinade1
tbsp honey
2 tbsp Rum

Mix together and simmer to glaze consistency about 10 minutes until slighty thickened, Serve with blackened salmon
