Jerk Duck Breast

1 lb duck breast- with most of the fat trimmed off and score
3 tbsp Island spiced jerk sauce
1 tbsp  oil

Method:Mix jerk sauce and oil together, trim of some of the excess fat off the duck breast and score the duck by using a sharp knife making thin lines across the fat and repeat the same process in the opposite direction.Rub Jerk sauce rub onto duck and marinate 1to 24 hrs. Over medium heat sear duck fat side down first until the skin is crispy, flip over and sear .Transfer to a 350 degrees oven and cook about 9 minutes for medium rare. Let the duck breast rest about five minutes before slicing.
