Island Spiced Filet mignon

3 5oz beef filet
2 tbls Island Fire Hot Sauce
2 all spice berries crushed
2 tbsp steak spice
2 tbsp oil
1 shallot minced
2 cloves garlic chopped
1 tbsp fresh thyme chopped
1 tbsp fresh rosemary chopped
salt
Method: make marinade by combining all ingredients except the meat mix well and rub onto meat and let sit 1 hr. upto 24 hr. Over medium high heat sear meat about 3 minutes per side fiinish in a 400 degrees oven to desired doneness. Serve with red wine pepper sauce
