Island Spiced Chicken and Mango Crepes

1 Lb Boneless Skinless Chicken Breast
3 Tbsp  Island Spiced Hot Sauce
2 Tsp Oil
1 Ripe avocado-Peeled and sliced
1 Mango- Ripe But Still Firm Peeled and sliced
1 Small Red Pepper Sliced Thin
Shredded Romaine Lettuce
Chef Carlton’s Mango Pepper Sauce

Method:Combine oil and Chef carlton’s hot sauce and marinate chicken 1 hr. Preheat oven or bbq. grill and cook chicken until done.
Sliced cooked chicken thinly, on crepe arrange chicken lettuce  mango pepper sauce to taste avocado, mango and red pepper and roll tightly and enjoy. Serve with a salad as a canape or on its own.

This recipe makes filling for about 8 crepese Crepes

The Crepes
1 cup all purpose flour
3 eggs
11/2 cups milk
pinch of sugar and salt
Butter for frying

 Method:Sift flour, sugar, salt. Mix eggs and milk. Add egg mixture to dry ingredients and whisk until smooth add butter or oil. Rest 15-30 minutes before using. Heat butter in none stick frying pan over medium heat. Add about two oz batter spread thin and fry about two minutes per sides and drain on paper towel

Makes about 18 crepes
