Honey Tamarid Chili Glaze

1 shallot  minced
1 clove garlic minced
1 tbsp oil
1 pc cinnamon stick
1 tbsp brown sugar
1( 8 oz) can tamarid nectar sweetened
1/4 cup honey
1 scotch bonnet chili pepper or 2 fresh fresh chili peppers
1 tbsp cornstarch
1 tbsp water
salt and pepper

Method: carmalize shallot and Garlic in oil add sugar and honey, carmalize well. Add tamarid, tamarid nectar and cinnamon stick.  Bring to a boil and simmer30 minutes. Thicken with cornstarch and correct the seasoning.
