Curry Apple Sauce

2 cups apple chopped
1 onion chopped
2 tbsp vegetable oil
2 tbsp curry powder
¼ cup white wine
2 cup vegetable stock or water
fresh thyme
1 tsp hot chili
scallion
pinch all spice
cornstarch
salt & pepper

Method: Saute onion and apple in oil for about 5 minutes add curry then white wine. Add the stock and remaining ingredients except cornstarch. Simmer 30 minutes, puree thicken with cornstarch as needed. season to taste
