Crisp Plantain Fritters

1 large green plantain
2 cups water
salt
1 tsp Island Spiced Hot Hauce
oil for frying

Method: Peel plantain slice and boiled in salted water for about 10 minutes until tender. Cool plantain and mash my hand or in food processor, if using the food processor don’t puree plantain into a paste it should be coasre and chunky. Taste and add hot sauce more salt if needed, shape as desired. Fry over medium heat about 3 to 4 minutes per side until crisp and golden, drain on paper towel. Makes about 9 fritters
