Coconut Shrimp with Papaya Pepper Sauce

30 medium shrimps peeled and devained
2 Tbsp. lemon or lime peper seasoning and island seafood spice blend
2 large egg slightly beaten and mix with bit of water
1/2 cup flour
2 cups unsweetened coconut flakes & 1/2 cup bread crumbs
salt and pepper
oil for frying

Method: Season flour with a bit of salt and pepper, Combine coconut, bread crumbs and spices, mix eggs and water together. Toss shrimps in flour then in egg mixture and then bread in coconut mixture and set aside. Over meduim high heat heat oil and fry shrimps until done and drain on paper towel. Serve with papaya pepper sauce.


Papaya Pepper Sauce

1/4  cup  Island Spiced Mango Pepper Sauce  
2 cups chopped ripe papaya
1/2 red bell pepperfinely chopped
1/4 cup red onion finely chopped
1 tablespoons fresh lime juice
2 cloves roasted garlic crushed
1 tbsp chopped cilantro
2 tbsp brown sugar

Method: Puree papaya and mango Sauce  in food processor, add remaining ingredients and mix well. Adjust seasoning.
