Coconut Seafood Chowder

1 cup onion diced
1 cup stalk celery diced
1 tbsp minced garlic
1 tbsp minced ginger
2 tbsp butter

 Sweat all the above in butter remove from pan and set aside

6 oz butter
6 oz flour
2 liter fish/ or 2 liter water mix with 2 tbsp fish base.
2 tbsp Island Spiced Citrus Rub

 Method: Melt butter add flour mix well but don’t brown flour, cook on low for a few minutes. Slowly add stock whisking well, bring stock to a boil mixing often not to burn flour. Bring to a boil and simmer on low heat about 30-45 minutes.

 1 can clams
2 lb mix seafood cooked
1 cup cooked potatoes
1 can coconut milk
1 cup 35 % cream
1 tsp shopped cilantro
1 cup samll dice sweet peppers (mixed  colors peppers)
salt and pepper

 Add above ingredients to soup with the vegetables bring to a boil & correct seasoning.
Serves 6
