Stage 1
1 coconut peeled & shredded in to julienne
2 lobster cooked cleaned and sliced thinly
2 tbsp Island Spiced Pineapple papaya Ginger Sauce
1 tbsp fresh ginger thinly sliced
1/4 of a red pepper thinly sliced
1/4 of a red onion thinly sliced
Stage 2
1/4 tsp vanilla extract
1/2 sprigs of cilantro chopped
juice and zest of 1 lime
1 allspice berry crushed
1/4 cup oil
2 tbsp cane vinegar
salt and pepper to taste
Method: In the first stage mix all ingredients together and set aside . In stage 2 make vinegrette by mixing all ingredients together adjust seasoning to taste. Serve as a salad or as a side dish
