2 lb mussels
1 sm onion chopped
3 cloves minced
2 tbsp butter
1/4 cup white wine
1/2 cup C.C.I.S. Coconut Curry
Juice of lemon or lime
Method: saute onion, garlic in butter add wine and curry sauce and reduce by half then add mussels and lemom/lime juice and cover until done. Adjust seasoning and add fresh chopped herbs like chives,basil, cilantro, thyme or parsley.
