The Salad
4 cups of shredded green cabbage
2 cups of apples sliced thin (granny smith apples)
1/2 cup chopped parsley
1 small red pepper thinly sliced
1/4 cup apple cider vinegar
3/4 olive oil
1/2 tsp. dijon mustard
honey to taste
salt and freshly ground black pepper
1/2 cup nuts chopped
Method: Mix cabbage, apple, pepper and parsley and mix well. in a separate bowl mix ol, vinegar, honey, mustard and salt and pepper. Mix well and combine with cabbage, adjust seasoning.m Topped with nuts and roasted chicken.

The Chicken
1 lb boneless skinless chicken breast
3 tbsp Island Spiced Hot Sauce
1 tbsp chopped fresh thyme
1 tsp oil.
Method: Combine chicken with hot sauce, oil and thyme. Rub marinade into chicken and roast or grill 10-15 minutes
or until done.
